The fabulous fact about my house is that there are always lots of nice things in the fridge. And eggs! So the other night I threw together a lovely Nicoise Salad for supper, pour Moi! (I register that I made too much but I am a "more, is more" kind of Gal! and cooking for one is so tiresome).
Let me say that my version of any Nicoise, is not exactly the classic. No potatoes, for one thing. But always, eggs, anchovies, tuna, green beans, capers...basically anything that works in a salad. I love broccoli in anything so usually it is a staple. The vinaigrette makes it. Try this one...never fails.
